01. Tell us about you
My name's Xanthe, I'm a cook, author of Stay for Supper and supper club host. I was born and raised in Scotland with 5 siblings and lots of dogs, which has made me so much of who I am today. I started taking cooking seriously about 8 years ago, when I discovered my love for growing vegetables and understanding where my food comes from. Oh, and I'm a Cancer.
02. What made you start creating?
My journey with food began with a passion for telling the stories of producers. And to this day, delving into how food gets to us and onto our plates is still what motivates me.
I far from thrived in anything academic, so I always knew that I wanted a job where I could work with my hands. From baking bread and growing veg, slowing down and appreciating nature has always been so important to me.
03. Where do you find inspiration?
From so many places... but travel is the number one. I love tasting different cuisines and experiencing different food cultures around the world. Then also eating in restaurants in London, reading cookbooks, and thinking about what's in season.
04. What makes the perfect dish?
To me the perfect dish is something that reflects the season we’re in. Fruit and vegetables taste the best when they're in season, and also when you can leave them as untouched as possible. In the summer my perfect dish is fresh tomatoes with an amazing loaf of bread and good quality olive oil - that’s all you need!
05. How do your charms tell your story?
I've been really enjoying adding charms to my favourite zodiac necklace. Recently I've added a clover for good luck and a pearl for wisdom as I believe you can never have too much of either!
I really relate to so many of the characteristics of a Cancer. I'm a sensitive soul and always need to remind myself to take rest seriously and look after myself first.
06. One piece of advice for someone wanting to start cooking?
Just go for it! Experiment, don't be afraid to fail. You'll keep learning lessons every single day, but those are what make you improve.
